Chocolate cake without eggs or yeast: the baking soda and vinegar trick that no one tells you

In a moment of urgent need for chocolate cake, we put these ingredients together, hoping to obtain a good result. After experimenting with various recipes for leavened breads and cakes using bicarbonate of soda, this time we decided to test its effectiveness together with a little vinegar, to see if it makes the cake lighter.

At first it didn’t seem like much, in fact, we didn’t like it at all.

The problem? We ate it too hot and it wasn’t sweet enough! Desserts have to be sweet, otherwise who will eat them? So we decided to water it down with maple syrup and… ladies and gentlemen, the result was exquisite!

It is a vegan, non-dietetic, rich and delicious chocolate cake, leavened thanks to bicarbonate of soda and vinegar. The doses were added gradually to obtain a compact mass that can be kneaded with your hands, leaving the bowl clean (probably thanks to the oil). Just be careful not to burn it, it cooks quickly and we like that the center remains slightly soft. There are no eggs, so no risk of salmonella, even if you decide to taste the dough raw.

Procedure

Turn the oven on to 180°, mix all the dry ingredients in a large bowl and then add the liquid ones already mixed together. Mix well with the spatula and your hands, until you obtain a smooth dough, which comes away from the bowl.

With this quantity of mixture you can use a baking dish measuring 25 x 15 cm, where we spread the dough, smoothing it out with our fingers, after having greased the dish. If the dough is too dry, add water and a little oil until you reach the desired consistency.

Bake immediately and do not open the oven for 20 minutes, but keep an eye on the surface of the cake. After about half an hour your cake should be cooked, remaining moist in the centre.

Let the cake cool well, because when hot the flavor of the vinegar is too evident. Once cold, drizzle it with maple syrup and enjoy this delicious dessert. If it turns out well, enjoy it to our health. If it doesn’t work out for you, know that not everyone can be an alchemist in life!
