Every detail, from the music to the oversized mugs, is a tribute to the world of Lorelai and Rory. As soon as you cross the threshold, it feels like you’re entering Stars Hollow: warm lights, shelves of books, colorful mugs and the smell of cinnamon cake that immediately takes you back to Luke’s counter.
And behind that counter is Ilaria Belbusti, the founder who transformed an American dream – and her passion for Gilmore Girls – in an entirely Roman story. After a trip to New York in 2006, Ilaria fell in love with the culture of comfort food and decided to bring its spirit back to Italy, but with a different vision: that of respect for every form of life.

The first vegan comfort café in Rome
The Snug is not just a place inspired by American culture, but an entirely vegan project, born from the desire to combine taste, ethics and kindness. Everything, from cakes to sandwiches, is prepared with plant-based ingredients and sustainable raw materials. The result? Soft pancakes, giant muffins, fragrant banana bread and an American coffee that seems to have come straight from Luke’s counter.
The menu is a journey through the iconic flavors of the American tradition, reinterpreted in an ethical key. Among the most popular dishes is the Reuben sandwich with sliced beetroot and corn “cheese”, and the famous Thanksgiving sandwich inspired by Friendswith layers of vegan turkey, gravy and mashed potatoes.

The staff is entirely female
Opening in the heart of a difficult suburb was a courageous choice. But Ilaria, who grew up right there, wanted to restore beauty to her neighborhood through the sweetness and strength of female entrepreneurship. The staff is made up entirely of women and every day transforms the place into a meeting point where kindness is contagious. A space where you can feel welcomed, listened to and pampered. It is proof that Stars Hollow can also exist in Rome, all it takes is a little imagination… and a cup of coffee.
