Forget tuna and salmon, we tried the first vegan sushi restaurant in Rome

In the lively Ostiense district of Rome opened Colors Vegan Sushi, the first restaurant in the capital entirely dedicated to vegan sushi. Curious to discover this novelty, we decided to visit it.

Rome is a city that offers many culinary options, but finding a completely vegan sushi has never been easy. Then came Colors vegan sushithe first restaurant in the capital entirely dedicated to sushi without animal ingredients. We decided to try it to find out if this innovation was up to expectations.

A modern and welcoming environment

The restaurant is located in via del Gazometer 30, In the heart of Ostiensean area already known for its lively gastronomic scene. As soon as they entered, we were welcomed by a well -kept and welcoming atmosphere, with minimal furnishings. The environment is intimate, perfect for both a quiet dinner and for an exit with friends.

The staff immediately proved to be available and prepared, ready to explain every detail of the menu and respond to our curiosities about ingredients and preparations.

A sushi without fish, but with lots of taste

The real protagonist of Colors Vegan Sushi is obviously the menu. Forget the classic sushi with tuna or salmon: here each dish is a creative reinterpretation, in which vegetable proteins and vegetables play a fundamental role.

We started with a selection of Nigiri and Hosomakiwhere the biggest surprise was the vegan “salmon”. Made mainly with pea extractsenriched with natural flavors and a consistency designed to remember fish, has a delicate but convincing flavor. The “tuna” also follows the same principle, with a visually and tastefully interesting result.

The uramaki They are the dish that has conquered us most. Among the most intriguing proposals, we tasted a pesto version of pistachios, salmon, confit cherry tomatoes and pistachio crumble, a delight for the palate, some more daring proposals but which convinced us a lot like the uramaki Dark wavea uramaki with black sesame spread, purple purple carrot, roasted yellow pepper cream and onion sprouts. Some menaki in the menu such as Fico Roll were not available because it is not a seasonal fruit.

Not just sushi: the alternatives of the menu

In addition to the classic rolls, Colors Vegan Sushi also offers other Japanese specialties in a vegetable key. We tried the onigiri filled with Spicy Tonno and Muhamara, a surprising mix of flavors: the vegan “tuna” gives a spicy and decisive note, while the Muhamara (a Middle Eastern sauce based on pepper and nuts) adds a depth and a creaminess unexpected. The compact and well -seasoned rice acts as a perfect base for these bold ingredients, creating a combination that reinvents elegance with the classic Japanese Street Food in a completely vegetable key.

We also tasted the “non -chicken curry” with tahin sauce, “like philadelphia” cellar and poppy seeds: the “non -chicken” to curry is a vegetable preparation that recalls the consistency of the chicken, seasoned with an intense and spiced curry sauce . The Tahina Philadelphia sauce adds fatness and roundness, while the cubes cut into cubes give freshness and crunch. Poppy seeds sprinkled on the surface create a slight contrast of textures, with a touch of slightly hazelnant flavor.

An experience that is worth trying

Colors Vegan Sushi is the demonstration that a sushi without fish can be equally satisfying and creative. The restaurant focuses on the quality of the ingredients, on an excellent presentation and on a balance of flavors that do not regret traditional versions, on the contrary.

Whether you are vegan, vegetarians or simply curious to try something different, this place is a stop to score. The booking is recommended, given that the restaurant is often full, a sign that the proposal has already conquered many Japanese cuisine enthusiasts in a more sustainable guise.

We will certainly return to taste other specialties, sure to always find something new and original.
