Handcrafted peeled tomatoes: these are the most good 8, according to the red shrimp

After publishing the ranking of the best peeled tomatoes purchasable in supermarkets, the Gambero Rosso returns to deal with this inevitable product in our handouts, to reveal which are the Best Italian artisan productions.

In a new tasting, in fact, the peeled lens made by small and medium niche companies, which aim for more artisanal quality, tradition and processing, ended up under the magnifying glass.

To draw up the ranking, the Red Gambero organized a Blind test on 21 selected products. The peeled tomatoes were tasted by a panel of experts who tried both raw and after a short cooking, evaluating fundamental aspects such as appearance, smell, flavor, aromatic profile and consistency.

Only the products that have distinguished themselves by fragrance, balance between sweetness and acidity, intensity and persistence, as well as for the soda texture but at the same time dark and for the taste and tasteful cleaning have entered the ranking.

At the top of the ranking we find productions that come from Campania and Puglia, regions rich in agricultural excellence, with the famous San Marzano tomato of the Sarnese-Nocerino DOP farm which is confirmed as the protagonist with two products on the podium.

The ranking of the best handcrafted peeled tomatoes

1) the peasants

Natural hand -peeled tomatoes. The peasants, a 52 -hectare Salento company founded in 2003, produces these peeled peeled tomatoes grown in the open field. Collected, peeled and invasted by hand, they are immersed in vegetation water with whole wheat salt and lemon. The result is a fresh, sweet and tasty product, with a fragrant aroma and a firm but dissolved consistency. Perfect to enjoy raw, for example on bruschetta.

2) Agrigenus (Acerra, Na)

Agrigenus, Bioagriworld brand, works the San Marzano cultivated in the fertile agro Acerrano-Nolano. The transformation takes place in compliance with tradition, and the result is a peeled tomato of excellent structure and taste cleaning, with an intense aromatic profile and an excellent balance between acidity and sweetness.

3) Solania (Valentine’s Day Torio, Sa)

Founded in 1993, Solania takes care of the entire San Marzano Dop tomato chain. The product presents itself with an intense red color and soda consistency, with a full and natural perfume. On the palate it offers a typical sweet/acidic taste with natural flavor and a dense but dissolved bite.

4) Pomilia (Nocera Superiore, Sa)

Appreciated by chefs and pizza chefs, the Pomilia peeled come from Apulian tomatoes and are worked shortly after the harvest. They have an elongated shape, soda consistency and a red red color. The nose express typicality and cleanliness, with a round taste, well balanced between sweet and acidic, and a long aromatic persistence.

5) Casa Marrazzo (Pagani, Sa)

With over 90 years of history, Casa Marrazzo offers a hand -worked San Marzano Dop and packaged together with its juice and fresh basil in design glass pot. The tomato is of a lively red, with well -balanced sweet and harsh notes and an acidic persistence in closing. Excellent for ragù and long cooking.

6) Gentile (Gragnano, Na)

Gentile is a historic brand of Campania that ranges from pasta to preserves. Its San Marzano Dop tomato is fleshy, with a decisive red color, and packaged without vegetation water. The flavor is well balanced between sweetness and acidity, with a vegetable and clean aromatic profile, which guarantees freshness and naturalness.

7) Agricultural Paglione (Lucera, FG)

Biological company since 1994, Agricola Paglione has produced peeled peeled tomatoes in the territory between the Tavoliere and the Apennines Dauno. The tomatoes are hand -peeled and stored with water, salt and a basil leaf, which dominates the aromatic profile with its menthol -meadow. The product has a marked acidity and a slight bitterness, resulting in a very true peeled and suitable for prolonged cooking.

8) Masseria Dauna (Lucera, FG)

The hand -peeled tomato produced by Masseria Dauna, led by an all -female staff, represents an artisan excellence of Puglia. The tomatoes, small and with an orange red color, are grown and collected directly in the corporate land and transformed within 12 hours. They do not contain rooms or added water, and are peeled and arranged by hand in glass jars. The product stands out for the fresh and sprinkling perfume, but cooking tends to dampen sweetness and aromatic profile. Ideal for long cooking.
