Start by placing the pumpkin puree in a large bowl. If you don’t have the puree ready, you can steam the pumpkin or in the oven and then blend it until you obtain a smooth and creamy consistency.
Gradually add the flour to the pumpkin puree, adding a pinch of salt to flavor the mixture. Mix well with a spatula or your hands until you obtain a soft but not too sticky dough. If it is too soft, add a little more flour until you reach the right consistency.
Divide the dough into 4 equal parts. Form them into balls and roll them out with a rolling pin on a floured work surface until you obtain thin flatbreads, approximately 2-3 mm thick.
Heat a nonstick pan over medium-high heat without adding oil. Once hot, cook the piadine on both sides, browning them for about 2-3 minutes per side, until they become crispy and lightly golden.
Once cooked, fill the wraps with what you like most, such as cheeses, grilled vegetables, hummus. You can also enjoy them like this, simply accompanying them with a light sauce or a fresh salad.
