Japan, in reality, is anything but a “surprise”: this year the Japanese country also won the Pastry World Cup, a prestigious international competition founded in 1989 by will of the MOF Gabriel Paillasson (and on that occasion Italy ranked sixth).

The competition involved the preparation of two types of tiramisu, Classic and Innovative, and the competitors had two hours to make them: the first version was reserved for desserts prepared exclusively with traditional ingredients, while the second for which the pastry chefs were more free to “create”, but as long as the tiramisu included a cooked part, a fresh spreadable cheese and coffee.
The desserts were evaluated by a jury of experts, who drew up the ranking based on the final score in the creation of both, decreeing that of the best Okada Ayaa grand piano-shaped tiramisu embellished with maraschino cherries and black cherries.
