The protagonist is quinoa, a food rich in nutrients such as the nine essential amino acids, iron and vitamins C and E. Here’s how to prepare this unique and versatile dish!

Cook the quinoa

Pour the quinoa and coriander into a non-stick pan, then cover with 500 ml of boiling water. Boil over a moderate heat for 15-20 minutes, following the times indicated on the package. Once cooked, turn off the heat and let it rest in the pan. Peel the avocados, remove the stone and cut the pulp into cubes. Finely slice the celery and onion. Combine everything in a large bowl.

Add the oranges and lettuce

Peel the oranges, collect the juice in a jug and clean the pulp, eliminating the white part. Add the pulp to the avocados, together with the lettuce, peeled and free of any fibrous stems or damaged leaves.

Prepare the seasoning

In a bowl, emulsify the extra virgin olive oil, the reserved orange juice and a pinch of salt. Pour the emulsion over the fresh ingredients and add the toasted sunflower seeds. Mix well to blend the flavors.

Top with quinoa

Shell the cooled quinoa and add it to the salad. Divide into four portions and serve.
