In Italy, stuffed pasta is a great classic and among the most popular variations there are undoubtedly ravioli with ricotta and spinach, which today are available in all supermarkets. But – among the many proposals – which are the best products? To find out, the Red Shrimp subjected 22 brands of fresh pasta to a taste test by experts.
In the end, only 7 products managed to exceed the “sufficient” mark, standing out for the quality of the pastry and filling. The panel of experts evaluated consistency, cooking resistance and harmony of flavours: the pasta had to be coherent, the filling recognizable and pleasant on the palate.

The ranking of the best ricotta and spinach ravioli in the supermarket
1) Sfogliavelo, Pastificio Rana
The podium goes to Giovanni Rana’s ravioli with very thin pastry with their lush filling of ricotta, spinach and mascarpone, with a balanced and harmonious flavour. Although the pastry may slightly lack color and firmness, the taste and solubility conquer the palate.

2) Ravioloni with ricotta and spinach, Nonna Rina
Well-stuffed ravioli, green filling with pieces of spinach, harmonious vegetal and lactic notes. They only lose a little consistency when cooked, but they remain among the best products on the market.

3) Maremmani, Zucconi Tradition
Round-bellied ravioli with an artisanal appearance, with predominant ricotta and spicy notes of nutmeg and pepper. The consistency is balanced, with semolina pasta slightly chewier than the softness of the filling.

Rustic bundles with robust pastry and delicate filling, varied aromas including milk, eggs and vegetables. The chewiness is good, even if the paste can be slightly mushy in some parts.

Classic Emilian format, thin and compact pastry, balanced filling with more evident notes of ricotta than spinach. The consistency holds up well to cooking and the flavors are harmonious.
