The natural humidity that saves the crust
The apple is not magic, it is practical, this fruit slowly releases moisture into the air, especially if it is cut or slightly bruised. By inserting it inside the bread bag, the internal environment remains more humid and the bread does not suddenly dry out. The result is that the crust remains softer and the crumb does not turn into sawdust within 24 hours.
How it really works
The principle is simple: the bread loses water over time, the apple returns it indirectly. But there is a flip side to the coin. Too much humidity creates condensation, and condensation causes mold to appear faster than you expect. Furthermore, if the bag is plastic, the risk worsens. Better to use paper or canvas, just like they used to do.
Then there is the question of smell, after a few days, the bread can absorb a slight hint of apple. Some people like it, others find it annoying. In any case, it is not a method to be used for weeks: it is fine to earn two or three days, no more.
