What is deossinivalenol and why it is dangerous
The deossinivalenol (also known as Don) is one of the most common mycotoxin detected in cereals and derivative products, both for human and animal use. This subtitance is produced by specific mushrooms belonging to the Fusarium genus, which can develop on cereals in particular conditions of humidity and temperature.
According to AIRC (International Agency for Cancer Research), Don is not classified as carcinogen for humans, but can act in synergy with other mycotoxins, increasing the overall toxic effect on the body. The acceptable daily dose according to EFSA and the EU regulation is 1000 micrograms per kilogram of body weight.
The acute exposure to High doses of Don can cause gastrointestinal symptoms such as nausea, vomiting, diarrhea and abdominal pain. Chronic exposure, on the other hand, could compromise the immune system and adversely affect growth.
