In Modena there is a therapeutic-ability laboratory that combines gastronomic tradition and social inclusion: “The tortellating“. Involves young autistic and adults and aims to teach them to produce fresh handmade pastathanks to the support of the Modena grandmothers, real experts in the art of tortellino.

The laboratory, which acts as a personal and professional growth space, allows these young people to acquire work skills in a context that helps them develop autonomy and independence.

Every week, a group of three boys participate in the production activities, accompanied by specialized educators and from a scientific team that follows the project. This organization allows participants to learn the various phases of the tortellini processing, giving them a practical preparation and a sense of personal fulfillment.

There are many restaurants that distribute the tortellini of the laboratory
