With seasonal vegetables, a pinch of spices and a simple batter made from flour, eggs and milk, I prepare a light and delicious baked mess. Perfect for lunches away from home, such as a picnic, a day at the beach or a lunch break in the office, this dish combines taste, practicality and lightness. Easy to make, with just a few ingredients and well-dried vegetables, the result is an irresistible mess that will truly conquer everyone.
It’s not a savory pie, nor a traditional vegetable side dish: it is a new recipe. This is a mess made from flour, eggs and milkwhich makes seasonal vegetables more appetizing, is dietary, but above all practical to carry and ideal for your lunches outside the home: at the seaside, in a picnic or in office.
Boil seasonal vegetables in the pressure cooker and let them cook for about 15 minutes from the start of the valve hissing. After this time, let all the steam out and drain them. At this point you can season them with raw oilor sauté them in a pan with oil and spices, according to your tastes.
In any case, make sure the vegetables are nice and dry; if you boil them, squeeze them well and drain away all the water, but if you sauté them, leave them on the heat until all the water has evaporated.
Let them cool for about half an hour and in the meantime prepare the batter: look at the photo sequence!
Leave to cool for a few minutes and serve warm. And as always…enjoy your meal!
