December brings with it the ritual of Christmas choices, and pandoro remains one of the undisputed protagonists of Italian tables. But among shelves full of shiny packaging and claims that evoke ancient traditions, which products really deserve consumers’ trust? An in-depth investigation by Altroconsumo analyzed the most popular pandoros through laboratory tests and sensory evaluations.
The investigation adopted a multidisciplinary approach: from chemical checks on key ingredients such as eggs and butter, to checking the declared weight, up to microbiological analysis to exclude the presence of contaminants.
The consumers’ verdict redraws the ranking
This year’s great innovation is represented by the “Consumer Choice” recognition, a mark attributed to products that excel in the test most feared by producers: double-blind tasting.
Over 130 people participated in the sensory evaluation conducted in Milan. Each pandoro was served without any identifying element, making it impossible to recognize the brand. More than 60 tasters expressed their opinion on each product.
This phase – which accounts for 40% of the total score – continues to be the most surprising. Even in the 2025 edition it subverted expectations, enhancing products that were able to conquer palates for their fragrance, consistency, appearance and overall taste.
Four pandori have obtained the “Consumer Choice” seal: Tre Marie, Conad, Maina and Bauli.
The tasting instead failed other products, with Bistefani and Paluani relegated to the last positions.

When ingredients make the difference
The excellence of a pandoro is measured by the generosity with which butter and eggs are used, the elements that define the richness and flavor of the dough. The analyzes confirmed that all the samples comply with the minimum legal requirements (4% egg yolk and 20% butter), but also highlighted those who choose to go further, investing in a more substantial recipe.
As far as eggs are concerned, the panorama is comforting: each pandoro tested well exceeds the regulatory threshold, with peaks of up to 10.6%, deserving very positive reviews.
The situation changes when butter is analyzed: despite respecting all legal limits, many producers limit themselves to the minimum wage, obtaining barely sufficient ratings. Tre Marie stands out, with almost 24% butter it clearly stands out, earning the only fully positive rating in this entry.
Security and transparency: controls beyond taste
Such a rich dessert requires particular attention in conservation. Fat oxidation was monitored through the number of peroxides: the response was unanimously positive, confirming well-managed raw materials and appropriate processing.
Another reassuring fact concerns sorbic acid: although it is a permitted additive, no manufacturer has included it in the formulations.
In terms of actual weight, the vast majority of pandoros reflect what is indicated on the packaging. Bauli, Maina and Balocco are exceptions, with minimal deviations that still remain within the legal margins of 2%. The microbiological examination did not reveal the presence of mold or abnormal yeasts in any sample.
When the label doesn’t say it all
Information transparency is an integral part of quality. All the pandoros analyzed comply with the basic information obligations, but some differences emerge on the voluntary indications. While the majority of brands offer complete information, Conad and Bistefani show gaps.
Useful details for buyers are missing: portion size, production date, consumption time after opening, exact quantity of characterizing ingredients. Bistefani does not indicate the consumption methods, Conad does not provide the manufacturer’s contact details for any reports.
How to recognize a good pandoro
Evaluating a pandoro before tasting it is possible, you just need to know where to look. Some immediate signals allow you to distinguish a well-made product from a mediocre one.
The survey shows that spending more does not automatically guarantee higher quality. Products from large-scale retail trade and discount chains have proven capable of competing with historic brands, representing intelligent choices for those who want to bring a good pandoro to the table without burdening the Christmas budget. Tre Marie confirms itself as the absolute reference for this 2025, while Conad and Lidl shine for the best balance between quality and convenience.
