At MasterChef Italia the starred chef Chiara Pavan brings anti-waste and sustainable cuisine with the Green Mystery Boxes

The new edition of MasterChef Italia opens under the banner of sustainability and conscious cuisine, with particular attention to the topic of anti-waste. Among the most significant innovations stands out the return of Chiara Pavan, called to lead the Green Mystery Boxes, special tests designed to enhance often underestimated ingredients and promote a more responsible approach to cooking.

Chef Pavan, born in Verona in 1985, represents one of the most authoritative voices on the contemporary gastronomic scene. After a university course in philosophy, he chose to dedicate himself to cooking, training in excellent contexts such as Da Caino, Zum Löwen and Osteria Francescana. Since 2017, she has led the Venissa restaurant in Burano, an award-winning company recognized for its ethical and sustainable vision, which has earned her important recognitions, including the titles of best female chef according to the L’Espresso and Identità Golose guides.

The heart of his cuisine lies in attention to the environment and the fight against food waste. Vegetables thus become great protagonists, like ingredients often considered secondary, enhanced through careful and creative techniques. Pavan promotes a cuisine that drastically reduces the use of meat, replacing it with vegetable preparations and fermentations, and which recovers the value of milk in all its forms, from yogurt to curds. Also central is the abandonment of plastic in favor of reusable solutions, such as airtight containers, natural waxes and traditional preservation methods.
