The Zeppole di San Giuseppe are a traditional Italian dessert that is prepared on the occasion of the Father’s Day on March 19th. These delicious donuts stuffed with cream are typically fried, but today we offer you a lighter and more modern version: the zeppole cooked in air fryer.

Choux pasta
In a saucepan, put the water, the butter cut into small pieces, the salt and the sugar. Bring to boil over medium heat. When the butter is completely dissolved, remove from the heat and add the flour all at once, stirring vigorously with a wooden spoon. Put on the fire and continue stirring until the dough breaks from the walls of the saucepan forming a ball. Transfer the dough to a bowl and let it cool for about 10 minutes. Add the eggs one at a time, mixing well between one addition and another until a smooth and homogeneous mixture is obtained. Transfer the dough to a pitcase with star nozzle.
Custard
In a saucepan, pour the milk with the lemon zest and vanilla seeds. Bring almost to boil. In a bowl, beat the yolks with the sugar, then add the sifted corn starch and mix well. Pour a little hot milk into the bowl with the yolks and mix quickly. Pour the mixture into the saucepan with the remaining milk and cook over medium heat, stirring constantly until the cream thickens. Transfer the cream to a bowl, cover with contact plastic wrap and let it cool.
Cooking in air fryer
Line the basket of the air fryer with parchment paper. Form the zeppole creating donuts with a diameter of about 7-8 cm directly in the basket.
Cook the zeppole in two phases, a first cooking of 10 minutes at 180 ° C and a second cooking of 10 minutes at 200 ° C
Once the zeppole is cooled, cut them in half horizontally. Fill a pitcase with the custard and stuff the lower part of the zeppola. Put the upper part of the zeppola on the cream. Add a little cream over the zeppola. Decorate with a syrup AMARENENA and a sprinkling of icing sugar.

Make sure not to open the air fryer during the first 10 minutes of cooking, otherwise the zeppole could deflate. If you don’t have a pitched sac à, you can use a freezer bag with a cut corner. The custard can also be prepared the day before and kept in the refrigerator.
