Savory pie with purple potatoes and smoked tofu
An irresistible and flavourful savory pie, prepared on a vegan shortcrust pastry base. The filling combines boiled purple potatoes and diced smoked tofu, flavored with olive oil, aromatic herbs, salt and pepper. Beetroot hummus
Chickpea hummus is an appetizer that is always much appreciated by everyone, but also something that you probably eat often, we recommend the red beetroot hummus variant. You can spread it directly on croutons, perhaps combining it with walnut kernels. Or you can serve it in small bowls to accompany raw vegetables sliced into sticks.
Russian salad with vegan mayonnaise
The preparation of the vegan Russian salad does not change, except for the mayonnaise. You will need to boil or steam diced potatoes and carrots, along with the peas. Then just season with a mayonnaise prepared with almond or soy milk and extra virgin or corn oil (more delicate flavour).
Battered vegetables

Starting from those made of durum wheat semolina, which are easily found in the supermarket, you can serve numerous variations of vegan cannelloni, to be prepared with your homemade bechamel, with mushrooms, ground seitan, cabbage or your favorite vegetables.
Pumpkin and mushroom risotto
A pumpkin and mushroom risotto to bring to the Christmas table that everyone will really like. For those who don’t want to give up the classic risotto, to make it vegan and even lighter, simply use extra virgin olive oil and vegetable broth to replace butter and meat broth.
Winter quinoa
Pair your quinoa-based first courses with seasonal ingredients: you can choose between mushrooms, broccoli, cauliflower, red cabbage, turnip greens, pomegranate seeds and mushrooms, but also think about making stuffed pumpkin. Add dried fruit, such as hazelnuts, to give an extra crunch.

Seitan stew with mushrooms and tomato
Tomato seitan stew is a hot and tasty dish perfect for holidays. The dried mushrooms are browned with garlic and extra virgin olive oil, then flavored with tomato puree, parsley and pepper. The seitan slices join the sauce, absorbing its aromas during slow cooking over low heat. An enveloping comfort food, ideal for enriching a vegan menu.
Tofu skewers
Here is the recipe for preparing delicious baked tofu skewers to enrich with seasonal vegetables. Perfect for an appetizer or a light main course, these skewers combine tofu cubes marinated in soy sauce with seasonal vegetables, olives or mushrooms.
