There is nothing simpler than preparing these muffins: just mix all the dry ingredients together and then add the chopped dates, the chocolate flakes, the oil and the rice milk, stirring slowly until the mixture becomes the right consistency (adjust a little by eye… if you see it too thick, add a drop of rice milk, if it is too soft, a little flour).

If you want to make a heart of melted chocolate inside the muffin… pour the mixture into the mold for about half its capacity, then place a larger piece of chocolate and cover with another dose of mixture until it fills ¾ of the mold.

If you want to make them more “cocoful” you can sprinkle a little coconut flour on top which will also form a sort of crust. Then bake at 180° for about 15/20 minutes, after this time check with a toothpick that the inside is cooked.

Dates in the kitchen: how to use them

Dates are used in cooking in many practical and creative ways. Blended with a little warm water they become a dense and sweet paste, perfect for replacing sugar in biscuits, cakes and bars: just use 100 grams instead of 80 grams of sugar. Cut into small pieces, they are added directly to the muffin and plumcake dough, as in this recipe, or mixed into the morning yogurt or porridge. They are also excellent pitted and filled with a teaspoon of almond butter or a flake of dark chocolate, for a quick and healthy treat.
