A light and vegan version of the Swedish Kanelbullars, prepared in the air fryer. These soft cinnamon swivels, made without butter and eggs, maintain all the taste of the traditional recipe with an eye to health and sustainability.

Loved by young and old, they are usually offered with a good coffee. Or with a nice glass of Glogg, a Swedish Christmas drink made with 1 liter of red wine, 3 tablespoons of brandy, 5 cloves, 1 cup of almonds cut in halfway, 1 cup of raisins, 3 cinnamon sticks, orange peel, sugar and a little vodka, put everyone Together on the fire until they start just to boil.
Having never tasted the originals, I entrusted myself to different recipes found on the web, also trying to translate the Swedes thanks to an automatic translator (but with very little results). In the end, here is the vegan version who came out of it, experimenting with the recipe with the use of sourdoughto which you can safely replace 1 cube of brewer’s yeast. To garnish, I added gods Walnut kernelsnot foreseen by the original recipe, which, on the other hand, contemplates cardamom. But I didn’t use it.

Preparation:
Pour the flour into a large bowl, mixing it with cane sugar and the sourdough. Knead by adding the cornstarch, salt, margarine at room temperature and milk. Work well, until the dough is smooth and homogeneous. Add more flour if necessary. Let the dough rise in your bowl, away from air currents and constant temperature, covering it with a canvas and a wool blanket. Wait now until the volume is doubled.
Then mix again, quickly, and Roll out the dough with the help of a rolling pintaking care to sprinkle with flour to prevent it from attacking. Must have a thickness of about 1 centimeter. Leave again to rise for a few hours, always covered. When you are slightly swelling, Sprinkle with cane sugar and cinnamon powder. At this point, roll up the dough on itself, so that the filling remains inside, pressing with the fingers near the “attachment”.




Then cut, with a knife, of the round slices of the thickness of about 2 fingerswhich you will arrange on a pan covered with parchment paper (see photo). Sprinkle again over each slice a little brown sugar and cinnamon and garnish with the walnut kernels. Bake in the oven at 180 ° C for about 30 minutes, until the slices are golden brown on the surface, while your home has fragrant with irresistible cinnamon.


In air fryer
To cook the Kanelbullars in the air fryer, follow the same steps as the recipe until the cooking phase. After placing the round slices on a sheet of parchment paper (or in a perforated basket to encourage air circulation), preheat the air fryer at 160 ° C for about 3 minutes. Arrange the sweets in the basket, being careful not to overlap them, so that they cook uniformly. Cook them at 160 ° C for 12-15 minutes, checking halfway through cooking and, if necessary, turning them gently to brown them homogeneously. If after the time indicated, they are not golden enough, prolonged the cooking of 2-3 minutes at 170 ° C. The result will be soft inside, with a crunchy crust on the surface. Serve them hot and enjoy them with a cup of coffee or a spicy drink.
