Cutting boards are essential tools in every kitchen, used daily to prepare a wide range of foods. Available in various materials, choosing the right cutting board can make the differenceinfluencing not only the practicality and durability of the instrument, but also the health of those who use it.
Wood, plastic, glass and stainless steel are among the most common materials, each with their own advantages and disadvantages. But which of these is best in terms of health and practicality? Let’s see together the pros and cons of each material, to help you make a more informed choice.
Wood
Wood has always been a popular material in the kitchen. A good wooden cutting board, if treated correctly, can last for decades, even becoming an object with a history. But is it really the best material?
According to several studies, including one conducted by microbiologist Dean Cliver, wood tends to retain less bacteria than plasticmaking it a safe choice for food preparation. It is though it is essential that the cutting board is made of high quality, raw wood, such as beech, oak, walnut or maple, avoiding soft woods or those with glues that could release harmful chemicals.
To keep your wooden cutting board hygienic, it is important to clean it thoroughly after each use, using hot soapy water.
Glass
If your priority is hygiene and ease of cleaninga glass cutting board could be the ideal choice. The glass is non-porous and cleans easily, without leaving food residue or bacteria. You can wash it in the dishwasher without any problem and its smooth and transparent surface makes it perfect for quick and practical use.

Stainless steel

Just a few days ago we talked about the American Chemical Society investigation which highlighted how the use of plastic cutting boards, especially those made of polyethylene and polypropylene, can cause the release of microplastics into food.
Every time a knife comes into contact with the surface of the cutting board, microscopic particles can break off, end up in the food and consequently in our body.
Although immediate toxic effects have not yet been identified, the accumulation of microplastics in the body could have long-term consequences, such as inflammation or interference with the endocrine system.
To reduce risks, it is essential to regularly replace worn cutting boards and adopt adequate maintenance, also avoiding exposing them to high temperatures. While plastic may be practical, the risks associated with the release of microplastics make other options, such as wood, glass or stainless steel, decidedly safer and more sustainable choices.
The ideal choice
Each material has its pros and cons, so the choice of cutting board depends on your personal needs. But for those looking for a natural and durable material, wood is undoubtedly the best choice although, as already mentioned, you need to be careful: not just any wood will do, it must be raw and of high quality.
