Vegan ginger biscuits. We are now two weeks away from Christmas and the mode “Christmas” has long been turned “on” in our heads. What better occasion, then, to prepare a traditional Christmas biscuit nice, good, easy and cheap?
After the homemade vegan panettone, here’s how to make some very fragrant ginger and cinnamon biscuits in a cruelty free version, to be served with a good coffee, a tea or, why not, a glass of wine, as per the Northern European tradition. Why…without ginger, what kind of Christmas is it?

Sift the flour and add the bicarbonate of soda, salt, sugar, cinnamon and ginger. Add the oil and, a little at a time, the milk. Mix until you obtain a smooth and compact compound. If necessary, add more milk or flour. Once a smooth and homogeneous dough is ready, wrap it in transparent kitchen film and let it rest in the fridge for half an hour.
After this time, roll out one with a rolling pin sheet about half a centimeter thickhelping yourself with a sprinkling of flour to prevent the dough from sticking. Use the appropriate Christmas molds to shape the biscuits. Place them on a lined baking tray and bake for 20 minutes, until they turn a nice golden colour. The kitchen will be invaded by a delicious scent of ginger and cinnamon.
