As Easter approaches, supermarkets fill with doves, the typical dessert of this party, and there is no shortage of chains branded products. Behind these brands, which are sometimes considered of lower quality than the big brands known, in reality, high -level confectionery companies or artisan workshops are often hidden.
We have investigated some of these products and the labels revealed interesting surprises for us.
Colomba “flavors and surroundings” Conad
The traditional dove “flavors and surroundings” of Conad stands out for the long -lasting dough and for selected ingredients, such as the candied orange peel and the whole almonds, which give it a unique flavor, scent and softness.
Despite being a brand product of the supermarket, it is created by the renowned Vergani company, a Milanese laboratory also specialized in panettone and breakfast products.

Pistachio dove “flavors and ideas” Conad
The flavors & Conad to the pistachio ideas, 850 g are produced by Galup Srl of Pinerolo (TO). The galup is a Italian food company, renowned for the production of desserts. Founded in 1922 in Pinerolo by Pietro Monsù Ferrua, a Piedmontese pastry chef, Galup has distinguished himself over the years for the high quality and the artisan tradition of his products.

Traditional dove “Le Grazie” Esselunga
The traditional dove “Le Grazie” of Esselunga has a particular processing, which provides 4 different leavening phases for a total of about 45 hours and the decoration with the typical glaze and whole almonds. The mother yeast, a mixture of water and flour that has been maintained and regenerated every day for over 50 years, has contributed to the softness of the dough which is enriched by candied orange peel.
The traditional dove “Le Grazie” is produced by Maina, a well -known brand based in Fossano (Cuneo), famous for its panettone and Easter sweets.

Coop classic dove
The Coop classic dove is obtained after about 50 hours of processing, necessary for compliance with the traditional recipe which involves the use of natural mother and natural cooling yeast, guaranteeing unmistakable fragrance and softness. It is produced with fresh eggs from chickens bred on the ground and without preservatives. It is produced by the same plant as those Esselunga, or Maina.

Classic dove Carrefour Extra
The Classic Carveur Colomba Extra is a dove prepared with farm eggs on the ground with fresh Italian milk, the dough is soft and finely worked, with fragrant candied orange peel and finally a glaze covered with whole almonds and granulated sugar. The production is entrusted to the Balocco plant in Fossano.

Although these desserts come from the same factory as the most famous brands, they are not always identical. The production lines are often distinct and also the recipes, albeit similar, can vary, influencing the final quality of the product.
