In Sweden, the passion for bread has reached surprising levels. In Stockholm, in the Sofo district, there is in fact a real hotel for mother yeast. Here the amateur and professional bakers can leave their yeasts in custody during the holidays, certain that they will be fed every day with water and flour and stored at the ideal temperature. A solution that combines practicality and a pinch of poetry.
Natural leavening bread is certainly not new. The first forms date back to ancient Egypt, have re -emerged during the race for American gold and have resisted to date as a symbol of authenticity. Mother yeast is a living organism, a colony of bacteria and yeasts that gives bread a unique taste and a long conservation. It requires constant care and for many it becomes almost a family member, handed down from generation to generation.
A service born for game
The Urban Deli of Stockholm launched the hotel as an artistic project, thanks to the initiative of Josefin Vargö, who had collected samples of mother yeast from all over Sweden. The jars, labeled with the name of the owners, were entrusted to the bakers of the restaurant, who transformed the experiment into a real service. The cost varies between 100 and 300 Swedish crowns per week (between 9 and 27 euros), but more than a luxury has become a sign of belonging to a community of fans.
